Hazelnut Date Bites
These hazelnut date bites are perfect to keep in the fridge for kids or after a workout! They are easy, quick, and delicious. Ive found they work with any kind of nut, but here we have just a simple recipe using hazelnuts for their bold nutty flavor and crunch. But feel free to swap them out for another nut to change up the flavor!
1 cup pitted dried dates, soaked in boiling water
¼ cup hazelnuts
¼ tsp cinnamon
Dash of salt
- First, boil some water to pour over your dates. You’ll want to soak them about five minutes in order to soften them up just a little bit. Them drain before adding to a food processor.
- Add the remaining ingredients to the food processor and blitz until the dates are smooth and the hazelnuts are coarsely chopped. If you need to, pause and scrape down the sides and blitz again.
- Next, roll into 1 inch balls and freeze overnight or for at least 4 hrs. Afterwards, you can transfer to the refrigerator in an airtight container for up to 7 days.
