Walnut & Currant Fried Apples

I love a good pan of fried apples with dinner during the fall. It tastes indulgent without all the fuss of turning it into a crumble, and it comes together quickly on the stove top. It’s such an easy dish and you don’t need much for it. You can sub the ghee for butter if you don’t have any on hand, preferably grass fed if you’re sensitive to dairy. But go ahead and peel just a couple of apples and serve this with your next sheet pan dinner or pot roast. It’s sure to be a favorite of all!

Ingredients:

2-3 medium apples, granny smith or any tart variety

1 tsp lemon juice

1/4 tsp cinnamon

2 tbs ghee or butter

1/4 cup walnut pieces

2 tbs currants or raisins.

How To:

  1. If you haven’t already, peel your apples and slice them before tossing with the lemon juice.
  2. Heat a pan to medium high heat with the ghee (or butter) until it’s melted and sizzling. Don’t let it get too hot or the butter will burn!
  3. Add the apples to the pan and cook for about 15 min, flipping the apple slices every few minutes. You want them browned and softened, but not turned to mush!
  4. Next, add the walnuts, currants, and cinnamon. Cook for an additional 4-5 minutes on a low heat until the nuts have softened just a little .
  5. Remove from heat and serve!
